  Yes, you will have to submit a letter of intent to graduate, however, you have to make sure that you have enough time to have your diploma apostilled and have it sent it to Korea.

  Your letter of intent to graduate does not need apostille :) you only need to apostille the BA diploma after the graduation (and background check too of course)

• I already completed my degree about a year ago. I recently went back to school to take classes to learn about teaching and child development specially to prepare myself for South Korea. Do I need to send transcripts and/or mention this during the interview?

  You may mention it at the interview, but EPIK only requires BA and MA transcripts :)
