I should note that I graduate from my Master's program in May. I'm assuming that my letter of intent to graduate should be fine until I have my copy of my degree and master's transcripts?

  Yes, you will have to submit a letter of intent to graduate, however, you have to make sure that you have enough time to have your diploma apostilled and have it sent it to Korea.

  if you have both BA and MA, then yes both your degree has to be notarized and apostilled and you supposed to submit transcripts for that as well :)

  Your letter of intent to graduate does not need apostille :) you only need to apostille the BA diploma after the graduation (and background check too of course)

  you can just write english, but you can also just copy and print the sentence below for it.  " Please do not open this envelope. Unofficial once it’s opened. 이 봉투에는 대학 성적표가 동봉되어 있으니 열지 말아주세요. 봉투가 개봉되면 사용이 불가합니다. "
